Crispy, Savory, Summery: The Rise of Crispy Rice With Shrimp, Bacon, and Corn

This vibrant dish is making waves among home cooks and chefs alike, celebrated for its perfect balance of textures and bold flavour. But do not be fooled by its casual name, this recipe is a masterclass in contrasts: It is crunchy yet tender, smoky yet sweet, fresh yet indulgent.
Crispy rice dishes have long roots in global cuisines, from the crispy socarrat of Spanish paella to the burnt bits at the bottom of Filipino sinangag. This version draws inspiration from Southern American flavors, Southeast Asian wok-frying techniques, and the flexibility of a modern pantry.
At its heart, this dish brings together five essential components:
Day-old rice – preferably jasmine or long-grain, fried until golden and crispy.
Shrimp – quickly seared to juicy perfection, adding a delicate seafood sweetness.
Bacon – rendered until crisp, infusing the dish with smoky depth.
Fresh corn kernels – sauteed for natural sweetness and seasonal brightness.
Green onions, garlic, and lime – aromatics that lift the whole pan with punchy, fresh notes.
Ingredients:
3 cups cooked, cold rice
½ pound large shrimp, peeled and deveined
4 strips thick-cut bacon, chopped
1 cup fresh corn kernels (or thawed frozen)
2 green onions, sliced
2 cloves garlic, minced
1 tablespoon soy sauce or fish sauce
1 lime, cut into wedges
Optional: chili flakes, fresh herbs (cilantro or basil)
Steps to follow
Step 1
Cook bacon in a large pan until crisp. Remove and set aside. In bacon fat, saute corn and green onions until softened. Add shrimp and garlic; cook until shrimp are just done then remove from heat.
Step 2
Add rice to the pan, press down and let it cook undisturbed for 3–5 minutes until bottom is crisp. Stir and crisp more as desired.
Step 3
Return shrimp, corn, and bacon to pan, then add soy/fish sauce, stir, and serve with lime and herbs.
Serve and enjoy with friends family over a cold beverage. If you like heat you can add chilli flakes and adjust the heat as desired.
